It’s snowy and cold here in Minnesota, but in Napa, the mercury still hovers between 50 and 60. We’ll pretend we’re enjoying warmer climes as we enjoy a Napa-inspired menu by Chef Royal Dahlstrom in the cooking school. Tonight’s menu celebrates the food and the spirit of Napa. We start with CRISPY FLAT BREAD PIZZA with SALLY JACKSON CHEESE, ROASTED GRAPES AND CASHEW PESTO. Next, we’ll taste TWO TYPES OF OYSTERS (whatever is best that day), done two different ways. For the main course, we’ll feast on CABERNET BRAISED SHORT RIBS WITH YUKON GOLD PUREE WITH GOAT CHEESE AND BRAISED GREENS. For dessert, we’ll finish up with SCHARFFENBERGER CHOCOLATE TOASTED PECAN TART WITH ZINFANDEL CARAMEL SAUCE. Join us for some mid-winter California dreamin’.

Agustin Huneeus is recognized as a driving force behind the concept of terroir in the United States. Tonight we’ll have the chance to experience four wines from wineries affiliated with Agustin Huneeus, paired with a menu from Chef Royal Dahlstrom. Michael Bouchard of Quality Wines will talk about the winemaker and his wine. Our first course is CEDAR PLANK ROASTED PRAWNS WITH FRISEE, SWEET MELON AND CRISPY PLANTAIN CHIPS paired with VERAMONTE CHARDONNAY. From there, we’ll enjoy CRISPY PUFF PASTRY WITH HOT SMOKED SALMON MOUSSE WITH GRILLED PINEAPPLE RELISH paired with ILLUMINATIONS SAUVIGNON BLANC. Next is PECAN CRUSTED LAMB LOIN WITH PARSNIP PUREE, BLACKBERRY AU JUS AND SMOKED PEPPERS paired with PRIMUS MERITAGE. RIGATONI TOSSED WITH SMOKED BACON, BRAISED VEAL, TENDER BEEF AND PORK RAGU TOPPED WITH RED COW VACAROSSA paired with FAUST NAPA CABERNET. Then we’ll enjoy coffee and dessert, a MINNESOTA APPLE LINZER TORTE WITH CABERNET CARAMEL SAUCE.
