Grand Papa's Bread Sticks
| | Ingredients | Recipes Home Make Printer Friendly | 3 and 1/3 cup unbleached all purpose flour 8 oz. water 4 tsp. yeast 1 Tbsp. salt 1 Tbsp. parmesan 1 tsp. sugar 1/4 cup olive oil | | Preparation | 1. Place the flour, salt and Parmesan in the bowl of your mixer or food processor. Mix for about 30 seconds. 2. In a small bowl, mix together the water (warm), yeast and sugar. 3. Once the yeast has risen, add to the flour mixture and continue mixing using the pastry hook or blade. 4. Slowly add the oil and work the dough for an additional 1 minute. The dough should be very firm. 5. Remove the dough from the bowl of the mixer or processor and form a ball. Lightly coat the dough ball with oil and place in a large bowl to rise and cover with plastic wrap for 30 minutes. (The dough should double in size). 6. Roll the dough out to a thickness of about 1/8 inch using either a rolling pin or pasta machine set on 1. 7. Make rectangles of about 5 1/2 by 9 inches, then make 1/4 inch by 9 inch strips using a pizza cutter or run through a pasta maker using the noodle blade. 8. Lay each strip on a baking sheet (do not flour or grease the sheet) and let rest for 30-45 minutes. 9. In a pre-heated 400 degree oven cook the bread sticks for 18 to 20 minutes. Check on them at about 16 minutes as oven temperature will vary. The sticks should be light golden. (An extra second can turn your golden brown sticks into burned sticks). 10. Take the sheet out of the oven and let cool. Store in an airtight container once they have cooled. |
