Upcoming Classes with Chef Royal

Chef Royal will be teaching a variety of fun, informative classes at Kitchen Window Cooking School in the nex few months. You can find more details and register for classes at www.kitchenwindow.com.

On March 13, Royal leads a tour of the Twin Cities' own Surly Brewery with founder Omar Ansari. Following the tour, Royal will prepare a menu featuring a seafood boil.

On March 27, accompany Royal on a trip to see how LeMire's Pure Maple Syrup is made. This family business has been making maple syrup since 1890. George LeMire will show how the sap is collected and processed. After the tour, Royal will cook a meal that includes crispy maple-seared duck breast with sweet potato puree.

On April 9, Royal toasts good food and drink with Hurray for Happy Hour. The class also features beer expert Brad "the beer guy" Magerkurth. Royal and Brad will pair some great beers with the perfect small dishes like caramelized onion burger bites and glazed chicken wings with garlic cream.

On April 22, join Royal for to learn how to make your own pasta in Pasta Beyond the Basics. He'll show how to make shapes like manicotti and tortellini. The class also features recipes for fillings and sauces.

On May 20, it's all about mushrooms -- one special mushroom, that is. Morel season is fleeting, so this Moel Dinner takes advantage of the spring bounty. The menu includes gnocchi with morel mushrooms, dandelion greens and goat cheese; thyme seared chicken breast with morel mushroom cream roasted fingerling potatoes.
