Chef Royal Teaches the Secrets of Soups and Stocks Nov. 2

On November 2, Chef Royal will teach a class on Soups and Stocks at Kitchen Window. One of the secret ingredients in any professional kitchen is homemade stock. It adds depth of flavor and richness to soups and sauces that you just can’t get from the canned stuff. Making stock is not difficult, but it takes some time. The good news is that once you make a pot of stock, you can freeze it and use it whenever you need it. Chef Royal will show you how to turn simple ingredients into rich, flavorful stocks and then use them to create satisfying soups to keep you warm this winter. You’ll learn how to make three stocks that are indispensable for any home cook: CHICKEN STOCK (including a ROASTED CHICKEN variation), VEGETABLE STOCK and BEEF STOCK. Royal will also make a kitchen classic: DEMI-GLACE, slowly cooked beef stock that is reduced until it becomes a thick glaze with an intense flavor that can be used as the base for many types of sauces. Royal will put these stocks to good use as he makes CREAM OF MUSHROOM SOUP with GARLIC CROUTONS, ROASTED-CHICKEN NOODLE SOUP, BRAISED WINE COUNTRY BEEF SOUP, and a WILD MUSHROOM DEMI-SAUCE that will do wonders for your next steak.
