Blue Cheese Compound Butter



4 ounces unsalted butter, softened

4 ounces blue cheese, crumbled

squirt of fresh lemon juice

½ teaspoon lemon zest


Blend together all ingredients until smooth.


Arrange on wax paper or parchments and roll into a tube shape. Refrigerate until firm.


Slice ½ inch thick and use to top steaks at time of service.
